I have eaten their hamburger, ribeye, and kidney. All very grassy

(though good) taste, the kidney especially. They sell thymus sweet

breads, but never had any when I inquired at the local farmers market

(short supply). Unfortunately, though their farm is nearby, they send

the unprocessed carcasses up to Seattle to be butchered and cryovac

frozen. I prefer my meat unfrozen, so I mail-order bison unfrozen.
