It isn't weird, cinnamon is actually a spice that enhances flavor.

Medditerranian dishes will call for cinnamon and it enhances the hot pepper

flavor and makes the dish hotter.

Yes, that's what I do. The typical group of spices for pizza only tastes

like pizza when it's on pizza :)

I expect the chicken is done by now, but I'll answer anyway. When I bake

chicken I frequently just rub the skin with olive oil and put plenty of sea

salt and pepper all over the skin and in the cavity. You can toss a few

cloves of garlic in the cavity too. . I sprinkle it on before baking and we

love

the crispy chicken skin coated with cinnamon. I also put plenty of cinnamon

in chicken soup. Lemon and dill are also very nice with chicken. I

personally like to oven bake my chicken just because it makes the skin

crispy, but crock pot chicken is of course delicious too.

Gotta go. All this food talk is making me hungry,

P.S.- I admire that you are willing and able to butcher your own chickens.
