Guest guest
>> So if I buy 2 pounds of organic broccoli I would be getting a 1-1/2 of unusable stems. << But broccoli stems are not unusable! You can peel off the tough outer layer, then julienne or slice in rounds or dice (just like carrots!) to add to salads, sauté with other veggies, add to soups, etc. You can also grate into meatloaf, spaghetti sauce, etc. You get the picture! Lora Brody has a tiny little cookbook out called " Broccoli by Brody " and ALL the recipes are scrumptious, and a lot of them use stems, which are only slightly less nutritious than the crowns. ~ Carma ~ To be perpetually talking sense runs out the mind, as perpetually ploughing and taking crops runs out the land. The mind must be manured, and nonsense is very good for the purpose. ~ Boswell Carma's Corner: http://www.users.qwest.net/~carmapaden/
