FYI:

Pancreas isn't a sweetbread. Sweetbread refers only to the thymus glands.

I think pancreas is just called pancreas...it doesn't have a presence in the

western culinary lexicon, so it doesn't have any special name...unless you

count the generic word 'offal' as a special name.

Curiouser and curiouser. You certainly seem to be correct. I noticed that

those references all referenced two organs as did both of my references. My

references were referring to two " thymus " glands one in the neck and one

near the heart. Your references alternatively referred to two organs:

either the neck and stomach OR the neck and chest OR the chest and stomach.

So now I'm confused; were my references being fast and loose with their

terminology and calling the pancreas a thymus gland or are there really two

thymus glands? If there really are two thymus glands, it's odd that the

references you sent didn't include both thymus glands since the sources I

was looking at distinguished between them on the basis of quality.

I hate when there aren't really good reference materials available!
