The biggest sign of lacto-fermentation that I've found so far has been

gas production. That and souring of flavor. As it ferments if you

taste it you can actually taste the lactic acid level increasing.

In my experience, though, the fermentation times that Sally gives in NT

aren't nearly long enough. Experiment with them and see what works for

you.
