I don't think that's quite right. The way I understood it is that the body tries to maintain a specific level of cellular rigidity. So, if you take away the saturated fat and replace it with polyunsaturates, the body must use cholesterol to make up the difference. To say that saturated fats " increase rigidity of cellular membranes " suggests that diet controls the rigidity rather than the body controlling it.
