? Heating it to 180F is called pasteurizing, and I thought that's what

we were trying to avoid here.

From what I understand, raw milk will turn to yogurt if you just leave

it at room teperature long enough. I buy my yogurt from the same dairy

I get raw milk in quarts, and when I want to make my own I just put milk

into the container, leave it in a warm place for a few hours, and it

turns to yogurt. No pasteurizing necessary. It'd probably keep better

if I pasteurized it, but I like it so much that it doesn't have to keep

long.
