Could somone please inform me? Hi Mark, While Olive oil is better than Omega 6 rich veggie oils, I do question it's value over VCNO. VCNO is clearly better to cook with and VCNO lowers the chance of double bond damage from free radicals and oxidized LDL formation (it is oxidized LDL which forms plaque). Olive oil has heaps of one & two double bond fatty acid molecules while VCNO has none (well almost none). Check out this oil analysis: http://optimalhealth.cia.com.au/OilAnalysis.gif Interactive Excel spreadsheet of the above: http://optimalhealth.cia.com.au/OilAnalysis.xls Discussion of free radical damage and fatty acids: http://optimalhealth.cia.com.au/Peroxidatiion.htm Comments most welcome, ======================== Optimal Health & Longevity, Greg , http://optimalhealth.cia.com.au Optimal_Health_and_Longevity
