Today we ate a huge Moon and Stars watermelon from our garden. Now I'm making watermelon preserves from the rinds. I have already peeled it and then sliced the rind. Now it has to set overnight with the sugar on it then I will cook it tomorrow. Then I will can it. Busy work is a good thing:)hugs SharonThis email is a natural hand made product. Here's what I do:peel the green part off trim the red part off (for the most part)slice into thin slicesput it into a pan that has a cover and will fit into the fridgecover the sliced peels with white sugar thicklycover and put in the fridge overnight. put it on the stove (with cover on pan) and bring to a boil, then turn the fire down low. Cook for about an hour, stirring now and then. The peels will get translucent and the syrup will thicken. When it's thick and cooked all the way through it's ready. If you aren't going to can it put it in a tight fitting jar and stick it in the fridge. When it's cold if it is sugared then cook it a bit more with a little water added. At that point you will just be heating it through to take away the sugaring. If you try it let, me know. It is so good! I had to call in sick this past weekend for work, it's getting depressing Right now, the pain is at its worst and it is like I have electricity firing through my extremeties.
