On Wednesday the granddaughters and I picked the garden of all the ripe tomatoes, eggplant, squash, peppers, okra and beans. That night I made a pan of baked eggplant with tomatoes, basil, mozzerella and parm. This was the last of the eggplant from the garden. I also cooked squash from the garden. Last night I used some of the green chiles from the garden and made a pot of green chili stew. It was so good!Tonight? I'm not sure but I have some steak that needs to be cooked. AHHman sharon im hungry! hahahaha My dinner hingeson princess' mood~if shes feeling better and stops sitting on my lap for 20min. i wanna do a chix strir fry...but if she still feeling clingy then its ham n chz sandwhich,chips,iced tea!! she can sit in my rollie cart if not by stove hahahaha

Last night I made tacos, used some of the pickled veg, chopped small, taco meat, refried beenz and some chopped salad, with cheese of course!!!

Tonight, maybe roast chicken thighs? With scalloped 'taters....

Mmmm...scalloped potatoes.....now that just screams yummy, fall comfort food! Yea! I love this time of year when we can enjoy having the oven on again!

Our kids next door got us a container of Papa Charile's Italian beef. We will have that with potato salad. They say its absolutely yummy.

We've been eating Spaghetti and Meatballs for a couple nights, tonight will finish them up. We buy the frozen meatballs from Costco, dump some in the slow cooker in the morning, add a couple cans of mushrooms, a jar of Newmans marinara, a can of chopped tomatoes, set the cooker on low and let it simmer all day until Steve gets home from work, and then he cooks up some Dreamfields whole wheat pasta, and with some kind of veggies on the side. Usually green beans. Its a good way for him not to have to cook every night when he comes home from work. The slow cooker has been his helper for some time now.

Sharon what is your recipe for Fried Green Tomatoes? My son has 39 tomatos that didn't get red, and I told him I'd find the recipe for them.

I miss being the main cook, but as long as I can guide Steve and he understands what I'm trying to tell him to do, things usually come out okay. He's strickly by the recipe kind of guy, but sometimes recipes need to be adjusted, and I always went by taste. He doesn't seem to like to do that, and his taste buds aren't as refined as mine, so he thinks everything tastes okay. ACK.......not EVERYTHING he cooks!! I'm at his mercy. lol....

Sharon,....there's nothing better than fresh veggies from the garden. My grandma always had big gardens and my fondest memories were spending time eating peas right out of the shell raw. :-) Unfortunately I did not inherit her green thumb, and the only thing I've been able to grow were containers of cherry tomatoes, and baby cucumbers. But that was exciting and I always thought I could do a whole bunch of baby veggies in containers if someone would help me. But, sadly that hasn't happened YET! Maybe when Steve retires we can do something like that.

Oh, once I did try and do a ground garden and grew regular size cucumbers, but my golden lab Sonny would get to them and eat half of one and I'd have all these 1/2 eaten cukes all over my yard. lol....funny puppy. :-)

I love having the oven on again too, then leaving it open to heat up the house afterwards lol......

I wasn't going to make anything for supper tonight, to each their own!!! But because it's fall and I wanted COMFORT big time, I took some fettucine alfredo (already cooked!) out of the freezer, I am defrosting it now and have some chicken bits to throw in it ;)

We had spaghetti the other night........

Oh and I looveee my homemade scalloped potatoes and I will have to make them again soon!!

I don't use a recipe for the fried green tomatoes. Here's how I do it:If the tomatoes are not real acidic I soak the slices of tomato in cider vinegar for a few minutes first. Then I dip them in seasoned flour (salt and pepper) with a little bit of corn meal. Then I fry the slices til golden in some veg oil. That's all I do. I have heard of folks who make a gravy out of the vinegar soak to pour over the fried tomatoes but I just can't even imagine that. lolhugs SharonThis email is a natural hand made product.
