Taco soup.....Re: whatcha been doin'?

Today my pain is better. Steve rubs a natural emu cream with capsaisin on and the heat helps relax the muscles. I have knots and lumps all over my body, and if they form over nerves then they get very painful. He can rub out the knots, but the lumps don't like to be touched. Sometimes its hard to know where the pain comes from.

Taco soup recipe:

1/2 to 1 lb of hamburger cooked throughly with 1 diced green pepper and 1 cut up onion, lightly salt, and add 1 tsp chili powder. Drain, set aside. In slow cooker mix 3 cups of hot water with 3 beef bouillon cubes disolved, add 3 tsp chili powder, 1 tsp cumin, 1/4 to 1/2 tsp garlic powder, 1/4 tsp cayenne pepper. [you can use more depending how spicy hot you like it]

Add 1-16 oz can chopped tomatoes w/liquid, 1 can of pinto beans w/liquid, 1 can corn w/liquid. 1 can black beans w/o liquid. Depending how big your slow cooker is you might have to eliminate some of the liquid from the canned additions. This can be made in a big stock pot too, just cook on low and stir every once in awhile.

Add beef mixture, turn slow cooker on low and cook all day.

When ready to serve, put soup in bowl, add mixture of cheddar and mozarella cheese on top, let melt a little, then add crushed up tortilla chips on top of cheese.

This can be made in about 30 mins. too if you don't want to wait. I think it taste better to simmer it all day so the flavors have time to really soak in.

This is similar to Tortilla Soup, we've just always called it Taco soup. :-)

Your taco soup sounds good! I will have to make it on the stove and cook it all day. Since we are off-grid I can't use a crockpot. hugs SharonThis email is a natural hand made product.
