Remove from the liquid (save the liquid) and when they are cool enough chop everything into little pieces, and pull the meat from the neck. Discard the bones (or save them for the soup!) In a skillet, whisk some butter and flour and gradually add the liquid., whisking till smooth. In the meantime the bird should be done and resting, so pour off the juices from that and add them, too Add the meat from the giblets and neck. A little salt and voila', giblet gravy! I have had people shudder at the thought and "gobble" it all up! I read but sometimes can't join in. My typing is limited. [sigh] Anyhow, I was wondering what is one dish that you or someone else makes for Thanksgiving you just can't do without? [it can be more than one, lol...] For me its the potatoes and turkey gravy. Nothing really special about it, but they just seem to taste better with seasonings from the turkey in the gravy, and we always use canned milk and butter in the potatoes. My SIL makes a "brandy" cranberry sauce and it has a nice zip to it, and is quite good. Have to be careful with that though. ;-) Anyone else want to share?
