Hi Everyone! I hope you're having a wonderful day! We've had several house showings in the last few days, so I'm pretty worn out. While our house was being shown last night, we went out to celebrate mom's birthday using a gift card we recently received from family. I'm always amazed to see how many people leave all of their uneaten food. We always take home everything that we haven't eaten. This can easily make one or more meals, especially since so many places have large portions. We even take things like the leftover chips at a Mexican restaurant. If you don't eat it, they will just throw it in the trash, so you might as well take it home and save on your grocery bill! I have found that when you're in a pinch, you can often make do without the crust. If I am too tired or don't have a crust on hand, I just make the filling and place it in a bowl. If you watch, half of the time people leave the crust uneaten anyway, so don't panic if you don't have a crust. Just make your dessert without it. Don't toss out those leftover drinks. Keep a couple of ice cube trays in the freezer and, when you have leftover coffee, tea or even chocolate milk, add it to the trays and freeze. Then you'll have ice cubes for you iced coffee, tea or for an extra cool glass of chocolate milk. Do the same with small amounts of juice or with the juices from your canned fruit like pineapple and peaches. You can use these cubes to flavor teas or in place of water in your Jello. The frozen cubes will help the Jello set up more quickly, too. This quick and easy menu is great for those hot summer days, and can be made in 15 minutes. Make your Jello and cheesecake pie in the morning. Then at dinner time put your water on to boil for the rice. In the mean time, mix your wieners and veggies and start it cooking. Then add the rice to boiling water. By the time you set the table and make your Parmesan bread, everything else should be ready to serve. Today's Recipes: Wieners and Veggies 1 can whole tomatoes 1 green pepper, seeded and sliced into strips 1 onion, thinly sliced 1 package wieners 1 clove garlic, minced Salt and pepper to taste In a large skillet, add all the ingredients, cutting tomatoes in half. Add 1 cup of water. Bring to a boil. Turn down heat, cover tightly and simmer 10-15 minutes or until wieners are plump and veggies are softened but firm. Serve over grits or steamed rice. Parmesan Bread For each person use: 1 slice bread Butter or margarine, softened Parmesan cheese, grated Garlic powder, optional Spread bread with butter, sprinkle with Parmesan cheese and garlic powder. Broil until golden. If you don't have Parmesan cheese, you can use just garlic powder which is delicious by itself. The above recipe is from Dining on a Dime. I have been so blessed to have many good cooks in my family. :-) Cheesecake Pie 1 (8 oz.) pkg. cream cheese, softened 1/2 cup sugar 1 cup sour cream 2 tsp vanilla 1 (8 oz.) carton whipped topping Graham cracker crust Fruits Beat cream cheese until smooth. Add sugar and beat. Blend in sour cream and vanilla. Fold in whipped topping, blending well. Spoon on to prepared crust. Chill until set, at least 4 hours. Top and garnish with your favorite fruit.
