It was midsummer eve here yesterday, so we had the traditional midsummer dinner: pickled herring (matjes, to be exact, nothing else will do for midsummer...), new potatoes boiled with dill, and with that sour cream and chives. For dessert strawberries and vanilla ice cream. I've never had pickled herring, Reb. It must be good. You haveit cold, yes? Must be nice and cooling. Do you keep the skinon the new potatoes? Yes, it's served cold, and is refreshingly salty (and spicey). The matjes variety is spiced with cinnamon, allspice, clove, and usually sandalwood. It exists in a continental European variety as well, especially in Germany and the Netherlands, but that is less spicey. I tried it once when I was in Germany, but was disappointed with the taste, too little spices in my opinion.And, yes, I always keep the skin on new potatoes!Tonight we'll have barbecue, and bake new potatoes in the oven with dill, salt and cream. love/Reb what's for dinner?To: MSersLife > It was midsummer eve here yesterday, so we had the

It's easy :-)

PICKLED FISH

(from Fran) (My Aunt)

2 C. vinegar

2 C. water

Salt to taste (heavy)

20 peppercorns

18 whole allspice

5 bay leaves, broken

4 slices onion

4 slices lemon

Cool all but the lemon 1/2 hour. Add lemon and cook 5 minutes longer. Take lemon slices out of brine.

Cut fish into pieces. Gently cook in brine until done (5-10 minutes). Pack into jar or glass bowl - refrigerate for 2 to 3 days before eating.

PICKLED FISH

(Mom)

1 Tbs. Pickling Spice

1 T. sugar (or MORE)

Onion, 4 slices

2 c. vinegar

2 c. water

salt

Cook brine for 20 minutes then add chunks of fish and cook until done. Refrigerate in glass jar or bowl for a couple days before eating.

(This recipe is best for softer fish - I was NOT pleased with pickled COD. Too firm!)

Mom's recipe tastes most-like purchased pickled herring... the pickling spices do it. Also, no need to debone fish as the vinegar will soften them just like those of herring. I used to use this one, especially, for pickling northern pike. They're so bony, and no need to worry about that when pickled. And, actually, I like this taste best.
