Roman, just go to the USDA database to find info like that: http://www.nal.usda.gov/fnic/cgi-bin/nut_search.pl It's the only source i know for nutrient analyses, although you have to kinda sorta take the numbers with a grain of salt because they neglect to tell us what type of diet the animals (whose tissue they got the data from) consumed. Although, with the New Zealand lamb, I'd think they would be grass-fed. Here, I did a quick comparision on a few things. I just used muscle tissue that I think may be commonly eaten, although the levels of various nutrients will vary between parts of the body and tissue samples, I imagine. 100 g serving Lamb liver, raw: 82.4 mcg SELENIUM, 6.979 mg COPPER, 4.66 mg ZINC Lamb - domestic, shoulder, blade, separable lean and fat, trimmed to 1/8 " fat, choice, raw: 19.6 mcg SELENIUM, 0.098 mg COPPER, 4.40 mg ZINC Lamb - New Zealand, imported, frozen, shoulder, whole (arm and blade), separable lean and fat, raw: 2.6 mcg SELENIUM, 0.081 mg COPPER, 2.80 mg ZINC Beef, variety meats and by-products, liver, raw: 41.3 mcg SELENIUM, 3.339 mg COPPER, 3.92 mg ZINC Beef, round, top round, separable lean and fat, trimmed to 1/4 " fat, all grades, raw: 20.3 mcg SELENIUM, 0.078 mg COPPER, 2.70 mg ZINC Even though we can't put full stock into these specific numbers, you can get an idea of how much more selenium and copper are found in liver as opposed to muscle tissue. And also, I should mention that kidney in fact, has more selenium than liver. The database lists 100 gs of lamb kidney as having 126.9 mcg selenium. No mention of whether the number is for domestic or NZ lamb, though. Beef kidney is 148.8 mcg per 100 g.
