Guest guest Posted May 3, 2002 Report Share Posted May 3, 2002 I've used spaghetti squash as a pasta substitute and even Wal Mart often carries it. The squash is oval shaped and yellow in color. To prepare I cut it in half, scoop out the seeds and put into a baking dish hollowed out side facing down. Then put 1/2 in of water in dish, cover with foil or the dishes cover. Some salt helps the cooking process. Then let it bake for an hour at about 350 - 375 degrees. The results when scooped out of the hard shell are yellow strings that remarkably are not tough/stringy in texture and go well with a red sauce. I haven't tried it with an white sauce yet. But when i cut it open after cooking it, it was just like spaghetti. I put butter and chicken drippings on it, and it was fantastic!
