On the soaking of oats

I have a cup of oatmeal soaking on top of my refrigerator. Rather than

cooking them all at once, can I just take out one serving at a time, adding

enough water and oats to replace them? Will the culture keep indefinitely,

or do I have to keep adding whey/yogurt/whatever? Is there any additional

benefit to the extended soaking time?
