BTW on digestion: I agree about taste and bile secretion. But there is more

going on too. When you taste something sour, you get saliva secretions too,

and likely your stomach does some secreting, and those other enzymes help

in the digestion, esp. if you have no gall bladder you need them. A lot of

people who think they have " acid stomach " actually have TOO LITTLE acid,

and maybe sour things or certain spices help secrete more.

But as far as indigestion goes, I think a lot of it has to do with

dissolved gas. When I feel like I have some " indigestion " , I chew a piece

of ginger. A few minutes later I get a nice satisfying " burp " and I'm fine.

I think it changes the surface tension of the liquids and releases the gas:

probably Ginger Ale would be even better.

Comments I love your pickles! I'm

learning about the kind of fermenting involved and

it is really interesting. My question is though:

are they pasteurized? My understanding is that the

bacteria used in making this kind of pickle is

basically the one sold in those expensive

" probiotics " pills, so if your pickles aren't

pastuerized, then they would be a natural

probiotic.
