A few specific examples according to Challem are that beta carotene activates some of the body's immune cells, increases lung capacity, can reduce DNA damage, and can lower cholesterol levels (hmmm...). I've read similar info elsewhere, but don't have time right now to go and check some other references. Let me know if you'd like some more references and I'll check them later when I have more time.
