lacto-fermented meat/sausaage

I would like to know more about this too. Like history, recipes and health

benefits online or off. Our family loves meat hotdogs and sausages and deli

meat, but the preservatives are too much. The next day we all suffer with

headaches, stiffness of the upper neck, and the grumpies. I make Italian sausage

for pizza and spaghetti, but would like to do more with meats.

Also, smoking without preservatives. Can it be done in combination with lacto

preserving them? I have kefir whey coming out of my ears some days.
