We're vegetarian, not quite vegan, , Sorry for the delay in responding to your request for my egg-free, dairy free chocolate cake recipe. I was up in Los Angeles getting that vegan daughter settled into her new apartment....Ask me anything about IKEA furniture. I am now officially an expert! Okay, what follows is a really really really a good recipe for chocolate cake that we frequently use for " special occasions " in our house. It never lasts more than a night because certain unnamed memebers of the family remain unable to walk by the kitchen without slivering off " just a little bit " and then the darn thing is gone before I get my " go-to-bed-with-a-glass-of-cold-skim-milk " slice. 3 cups all-purpose flour 2 cups sugar 8 tablespoons Hershey's unsweetened cocoa 2 teaspoons salt 2 teaspoons baking soda 3/4 cup canola oil 2 tablespoons applecider vinegar 2 tablesppons ailla 2 cups water Sift dry ingredients. Add wet ingredients. Stir until smooth. Bake at 350 for 30-40 minutes (for 9 x 13 or round cake pans.) Cake should spring back when touched. Toothpick should be clean when poked into center of cake. Don't overbake. The cake is very moist. For our vegan daughter, I will just sift a bit of powdered sugar on top to make it " pretty. " She treats herself to a scoop of vanilla soymilk icecream with a slice of this cake. There is another quickie version of this cake in " The Clueless Vegetarian " which calls for 1 1/2 c. flour 1 c. sugar 1/4 c. unsweetened cocoa powder 1 tsp. baking soda 1 tsp. vinegar 1 tsp. vanila extract 1/3 c. canola oil 1 c. water Mix the dry stuff. Add the wet stuff. Dump into a well greased 8 inch square baking pan. Bake at 350 for 30-35 minutes. If you want to get fancier than powdered sugar for frosting, try this: 1 cup non-dairy margarine 1/2 cup unsweetened cocoa powder 1/2 teas. vanilla extrat 2 cups powdered sugar. Process margarine until smooth. Add the rest. Beat until smooth and fluffy. Take a really big taste.
