Got organs and glands!!!

Well that didn't take long. i posted my question re sources of grass-fed

organs/glands on sunday and they'll be arriving in the mail tomorrow! i got

bison pancreas, thymus, thyroid, liver, kidney, spleen and heart from

Northstar Bison. thanks to bianca for the recommendation :) it turned out to

be more expensive than i anticipated and i will continue to look for sources

closer to home for future orders, but i'm thrilled to get some of the things

that are so hard to come by in my area, such as sweetbreads! Wonder how

thymus will taste in my morning shake?

Hi Suze,

Its too tasty to cover up the delicate flavor in a shake. Eat it raw and

separate.

I'd say yes if it is true that both thymus and pancreas are considered

sweetbreads. I've only had thymus. Mom always sliced it up and sauteed lightly

in lard. Very tender, can cut with a fork. Flavor somewhat like chicken but

better.
