I THINK IT IS IMPORTANT TO REMEMBER THAT "QUALITY OF LIFE" SHOULD BE A MAJOR ELEMENT IN DEALING WITH PSC. IF A PERSON FEELS THAT CONTROLLING EVERY ELEMENT OF THEIR DIET IS THE BEST WAY OF DEALING WITH AN ILLNESS-- MORE POWER TO THEM. IF, ON THE OTHER HAND, YOU FEEL THAT YOU ARE HAPPIER HAVING A COOKIE OR A BIT OF ICE CREAM FOR DESSERT, OR THAT YOU WANT YOUR FISH OIL IN FISH AND NOT IN A CAPSULE, YOU SHOULD FEEL FREE TO DO THAT.

I ALWAYS FEEL JULIA CHILDS HAD THE RIGHT ATTITUDE, WITH A SMALL CHANGE, (ALMOST )EVERTHING IN MODERATION. I THINK ALCHOHOL IS TABOO, BUT COOKING WITH EXTRACTS, WITH SUCH A SMALL AMOUNT OF ALCHOHOL WOULDN'T BOTHER ME. ESPECIALLY IF YOU ARE HEATING IT. VANILLA IS 40% ALCHOHOL, BUT 40% OF A TEASPOON IS NOT MUCH.

THE BEST WE CAN DO IS TO BE AS INFORMED AS POSSIBLE AND TO BE OBSERVANT ABOUT HOW FOODS AFFECT OUR OVERALL HEALTH.

NOW I WILL GET OFF MY SOAP BOX.

I’ve seen

recipes with 1½ - 2 teaspoons (or more) of an extract.  Mizkit says 40% of a teaspoon isn’t much

and  she’s right, now consider this,

most recipes call for anywhere from 4 -7 cups of batter.   Any

measurement of extract in that much batter isn’t going to amount to

anything, even if you ate the WHOLE thing. 

     

Now, if we’re

talking about fruit cake your Mother In Law made…… that changes

everything………… Ohhhh, golly, gosh,

darn I’m so sorry I can’t have anything with extract in it!

Thanks everyone,

I’ve been feeling really low the last month or so. We are

looking at 8 weeks of summer here, without any kind of a trip to break it up. We

are a travelling family and have been spoilt for holidays the last few years, now

being tied to the hospital (we must stay within 1 hour of the transplant

centre) we are all getting really restless. The cooking idea usually cheers me

up, but the thought of rum balls with no rum, or Christmas cake with no was

the last straw.
