Why Cook grains?

This just occurred to me. Why do we cook our fermented grains? Well,

I guess I know the answers to that. 1) It tastes better 2) Primitive

Healthy-guys did it. I assume cooked fermented grains are healthier

merely because the " primitive " healthy cultures did it, but here is

my question. WHY is it healthier? How can it be? Anybody have even a

guess? I am without a clue.
