MICHAEL SCHMIDT Schmidt is currently in week number 3 of his hunger

strike for food freedom. As a bio-dynamic farmer with passion he challenged

through education and lectures from day one the current industrial farming

system which more and more destroys the cultural identity of rural North

America. He introduced Spelt to the North American market and founded Ontar-Bio

which then became Organic Meadow Co-operative, the largest organic dairy

processor in Canada. In 1992 he started the first Cow Share program for raw milk

EDUCATIONAL TRACKS AND SPEAKERS

Tracks offered at this year's conference include several full day seminars on

Friday, November 11: " Nourishing Traditional Diets " by Sally Fallon Morell; " Gut

and Psychology Syndrome " by autism specialist, Dr. Natasha -McBride,

M.D.; " Nutrition and Metabolism " by Seneff, Ph.D.; and a biodynamic

farming track featuring Hugh Lovel, Schmidt and Christy Hemenway.

Saturday's joint session of Mythbuster lectures features experts taking aim at

myths about fats, salts, industrial sweeteners and plant-base diets. A key

speaker is the notable China Study debunker, Minger. The China Study by

Colin has increased the popularity of vegetarianism, yet according the

Minger, the research justifying plant-based diets is significantly flawed.

Other partial day tracks will cover the topics of Children's Health, Gut Health,

Hormone Health and Recovery from Digestive Problems, Vegetarianism and Cancer.

More cooking classes than ever before have been added to the agenda, including

classes on broth-based soups and stews, gluten-free sourdough bread and

THURSDAY PRE-CONFERENCE ACTIVITIES

Join in the festivities on the eve of the conference at the FTCLDF FundRAISER

YOUTH EDUCATION PROGRAM

The Wise Traditions Conference is pleased to provide a children's program for

this year's meeting. The program is available for a price of $210 for Friday -

Sunday, includes Friday lunch, Friday dinner, Saturday lunch and Sunday brunch.

PLEASE NOTE: THIS DOES NOT INCLUDE THE BANQUET DINNER BEING SERVED ON SATURDAY

NIGHT. The program will be making cheese quesadillas during the Saturday

evening event. The fee for the program without meals is $100. Children aged 3

- 12 who are potty trained are welcome to Wise Traditions 2011 as long as they

are enrolled in our children's program. For the sake of other conference

attendees, we ask that parents refrain from bringing children to the conference

sessions. A special room has been set aside for parents of infants who want to

attend the conference. There will be a live audio feed from one of the sessions

to that room throughout the day's events. There will be no child care provided

for infants and children under age 3.

morning and fill up on WAPF favorites like soaked oatmeal, quinoa porridge

(Saturday only), hardboiled eggs, homemade biscuits and sausage gravy, cinnamon

rolls, greek yogurt or drinkable fruit yogurts, whole fruit, sprouted seed

" coffee " and last but not least.. chicken or beef bone broths. Our fixin's bar

CONTINUING EDUACTION UNITS FOR HEALTH PROFESSIONALS (CEUs)

Listed below is information for those interested in attending the conference for

professional education credit. Please note we have requested approval for LAc,

RN and RD are covered. Nutritionists need only the $5 Certificate of

Attendance. If your profession is not listed, please check with your

professional board to see if they will accept the Certificate of Attendance.

Fees

The fees for CEUs is $25 per day (5 credits each day) or $65 for all three days

(15 credits). Many conferences do not charge extra because the fees are built

into the registration fees. In an effort to keep our registration fees low, we

do not charge everyone but charge the individuals using this service.

Nutritionists: No CEUs required. Certificate of Attendance required - $5 fee.

(NANP) for Category II CEUs, CHEK Institute, Nutritional Therapy Association

(NTA) and American College of Nutrition. (15 credit hours for full

registration.)

.. NOTE regarding Chiropractors

Chiropractors (DCs): Sought approval from the Texas Chiropractic College. But

the paperwork required is so involved that it is unreasonable for us to do it.

It would be a burden on our speakers. Next year we will check with another

school. You might see if your state board will accept a Certificate of

Attendance.
