Ida, I don't know the bennefits as replacement in the GFCF diet, however, I do know that is healthier than regular butter and you can use it for everything.  As for where to buy it, since it comes.from regular butter, You can make it.  My sister buys the butter in Costco (that is the only one she likes for this) and just follows the process.  There are several videos in YouTube where the whole thing is demostrated.

I have and use it - its takes great - has a more buttery taste that most "butters" You can bake with it. I get it at Whole Foods. It is a little pricey but worth it

Ghee is butter with the cream burned off. You can make it yourself with unsalted butter. Place sticks of unsalted butter in a metal baking pan and cook at 250 for about an hour. Take it out and strain in into a glass jar, making sure that the white liquid or crusty bits stay in the pan. Discard the white liquid/crusty bits. Let the ghee cool and then refrigerate.To:

I use ghee and yes it does taste like butter, it is more expensive than regular butter, but it lasts forever. It is not soft like butter so it is a little harder to work with but makes a great substitute for butter for those on a GFCF diet.My Publix stocks it for me. You can get it at most health food stores and at Whole Foods.
