Well I am in ME., and you are so lucky you did not get this snow, and stopped yesterday, my husband shoveled the loooong driveway, woke to more on the ground. Now saying another storm next wk., which sounds right, as I am due to go to my Dr's appts made for the 4th time, in Ma. and have had to cancel do to this tiring snow. I also saw that you after having to drag around to the stores, I am sorry as it is no fun, when so painfull, but I see you said you are going to make stuffed scallop shells?!, this sounded so good I wanted to know how they are done? My husband is a scalloper goes down out of New Bedford all summer, and up here in Maine in winters, but this is one thing I am not good at cooking seafood, as a kid, I never liked it so never learned how to cook it right or how, and what different ways. So thought you may tell me how these shells are done, and sometime when I can stand the kitchen duty again, I could fix these for my very patient, husband who has been doing everything without a complaint, only wants me to feel better, but I really want to take some of this off of him if I can just get to cook one meal or do something around here. It gives you from Friday until Tuesday to recover from treatment. then the next day it begins again after you have class. Just remember that the 2 important things or your class and treatment and let other things slide if you need to. I was reading that you fly. To bad money is an issue. In the spring/ summer you could have flown into Newport and you , Tigger and i could have met for Lunch. my husband retires Sept 1 so maybe the end of August or Sept we can meet somewhere. I can only drive to about Portsmouth before fatigue sets in. How has this crazy weather been treating you. We didn't get any snow that I am aware of. The rain started before midnight so if there was any it was washed away. The rain was pretty heavy so I would sleep then it would wake me. Keep in touch. So if I could bring in some money it would be a lifesaver. Now I'm not sure, but hope to have the energy to take the class on Tuesday mornings. I live in Newport and the town on the opposite end of the island is Portsmouth.My brother in law use to be a lobstermen. I know a lot of the fishermen and lobstermen here because my husband is about 5th generation. When my husband retires he plans on fishing more. One of my grandsons whould rather be fishing than breathing and my son and his kids go fishing at lest once a weak from spring through fall. One of my nephews also loves fishing. He usualy goes to Maine once a year with his boyscout troop to go ice fishing. My daughter use to win the childrens fishing derby ny dad's gun club put on every year. She would usualyy win in more than one catagory. I had a recipe from the store. I had to adjust it because we don't do cottage cheese. Marti does so she might like it. This time I had bay scollops. I drained them and coated them with seasoned breadcrumbs. then I sauted them in smart one(margarine) with a little garlic. I don't like to over power the scollops. while the large shells were boiling. After ther cooked about 5minutes I stiffed them in the drained shellsand topped with a little mazzarella and tossed them in the microwave fore a couple of seconds to melt the cheese. my family ljked them but next time I'll bake them for a few minutes instead of putting them in the microwave. I didn't have to stand for very long. I added a tossed salad from one of those bags and added a few veggies to it. We use the salad spritzers or fat free dressings.
