I am finding almost everything I need for baking in our town. Guar gum is in one of the indian stores. It is used in laxatives and if I use too much of it, or eat something with guar gum in the ingredients I get diarrhea. I once saw an article saying that we can use 1/2 and 1/2 guar and xanthan gums in recipes.
