Guest guest Posted September 20, 2004 Report Share Posted September 20, 2004 Natasha, I use zucchini a lot for Stella, also try broccoli, it's great for volume and potassium too!! I will slice it like shoe strings and make an alfredo sauce and call it fettucini alfredo, I also bake it with cheese/oil/egg for a quiche. I make pesto, and again use the zucchini as the 'noodle' for pesto. I'll make a zucchini parmesan rather than eggplant, but that's also great to use as it absorbs tons of oil and gets crispy. I stuff the zucchini (length wise)with an egg/cheese batter and serve it with some steamed spinach. Guest guest Posted September 20, 2004 Report Share Posted September 20, 2004 Dear Natasha I have not used it with the keto diet, but because I am a gardener (didn't plant any this year) I have learned to use it creatively. Here is my best recipe idea with it: I slice it thin or dice it and cook it down with tomato sauce, ground meat and seasonings and serve it over rice. My family calls it " zucchini casserole, " but it is a one pan meal that is served over rice. Of course the seasonings you mix in mean a lot. Whatever are familiar tastes to ph would work best. We like garlic and Italian seasonings, and I make it fairly strong, as the rice is bland and it must flavor everything. Because our keto kids can't have rice, you could just add some tomato sauce and seasonings and meat for a casserole... Raw zucchini is nice dipped, like a chip. Using sour cream you could make a flavored dip and have it as a nice treat. Zucchini has no real taste of its own, so whatever you do with it, the flavor comes from that. Thanks alot.I've never ever though about using zuccini as pasta.I think it is a great idea as ph loves macarroni and cheese.I pinted out all your ideas and I am going to try something tomorrow. He loves it. I took him awhile from being off the diet and knowing what the real stuff is but now its a real treat for him. Guest guest Posted September 23, 2004 Report Share Posted September 23, 2004 It is hard and when we were doing keto, I calculated the zucchini but not the fat. I still had to add the fat (ie cream for milk etc). Much of it is absorbed into the pan. Now, we are doing Atkins so I don't have to calculate it. They are yummy and he loves them.
