Guest guest Posted May 8, 2012 Report Share Posted May 8, 2012 Man o Man! do I dig pinto beans and not those from a can. never liked can nothing other then can spinach which I always have at least 30 cans in the closet. now I cook my pinto beans in a crock pot most of the time if I'm not in a hurry and I let them cook on high for the first 6 hours, then turn them down and let them cook for another 12 hours on low. they are pretty well done after the first six, but they will get thick when they cook on low for another 12 hours I have found. I use to cook 5 cups of beans at a time, now I cook one or maybe one and a half. I still add the ham bone if I have some in the freezer. don't add bacon grease any more, but will pitch some real butter in if no bacon grease. add onions, celery, bell peppers, garlic, touch of salt and pepper. you can do the same if you are in a hurry on the stove in a big bean pot, but you got to keep an eye on the water. the beans this way should be ready to eat in 3 hours or less. pinto beans only have dain near 50 carbs in one cup, so now I only have half of a cup and only eat them when I use insulin in the morning or for dinner. I never have them at lunch using the flex pen. can you still remember the days as a kid when Momma had a pot of beans, fried potatoes with onions and home made corn bread? well I can make some corn bread from scratch that will jump out of the skillet and slap you down. use to poke small holes all over the top of the corn bread after I took it out of the oven and it was still hot. then I would pour melted butter all over the top of it and let sit for a few minutes with a lid on it so it would sweat that butter all the way through. no wonder I am a fat pig to day! a heart attack just waiting to happen. then the next day I would eat a huge bowl of corn bread with milk and a onion. even used butter milk half the time. I heard only folks from the South like milk and cornbread? I grew up eating it my self and it is really hard to beat a bowl of chopped up hot cornbread and then pour some cold milk over it. just like eating cereal and don't for get to have a chunk of onion to go with it or even a hot pepper! in the winter I made my pinto beans the same way as I just said above, but would turn it in to chili instead. browning some hamburger meat and throwing that in. a can or two of chopped tomatoes, some chili powder, some other spices and I had chili. I know folks who make chili when they get off work, but when you ask them they always use can beans. I don't suppose there are many folks left that still make beans that are dry and hard. seems like every one now is in to quick and easy. you get a Crockpot of beans on and the whole house will smell grate. then just to be kind of mean, open all the windows and allow your neighbors to enjoy the smell as well. if they are old enough it will remind them of growing up. now it is true that beans can and do cause gas. if this makes you ashamed or you are around lots of folks the next day, then you can soke the beans 3 times at least. I have found that this does work, but as well you take some of the flavor of the beans away when you continue soking them and pouring off the water. my advice is just run to a room where you are by your self and let it wrip. I think this is a good thing to do by your self of course, unless you are married with a spouse, then when you said I do it mint for better or worse and in sickness and health. God wouldn't have made us to releace gas if it wasn't a thing our bodies should do for good health. it is a natural act. I'm ok and do agree though when around lots of folks who may not appreciate your gas caused from to many pinto beans, I do think finding a closet or a room by your self is a good plan. of course if you got a guide dog? well this makes it way to easy! no need to run off and hide, because every one knows it was the dog. every one know's a dog has gas and you never hear it before it attacks your nose. of course I do understand if you got problems from eating foods that cause gas, then you best stay away from eating them very much. like if you got IBS, then gassy foods can cause much pane for you. I can't eat the size of bowls of beans I use to eat and this is a blessing I can't ow won't, but never will forget those day's when I did because I could! my folks made a pot of pinto beans or navy beans and some time butter beans every other day of my life at home and they continued this practice until they both passed. it was just what poor folks ate back during the depression. beans and corn bread. if they wanted something sweet, then they would pour molasses over the corn bread and eat it like cake. my kin folks use to pat my big old belly and talk about how healthy I was. they really thought fat was healthy. they said all thin folks were in a sick kind of way and they should go see the saw bones. I suppose they ate the only way back then that they could to get by. they fried about everything they ate and used lots of lard. we have came a long way from how our kinfolks use to prepare food and most of it is better. of course they didn't have a lot of fast food back then or very many restaurants and couldn't afford them if there was a lot. now kids are learning that quick and easy is best when this is also a very bad habit they are learning. If a kid seen a pot of beans cooking on the stove they wouldn't have a clue what it was. they have probably never seen a pot of beans cooking that way ever in there young life.
