I definitely would not do it now but even when I made a box of Jiffy cornbread how do you keep it so it will be nice and tasty but not crumble? I've heard of it and do recall hearing it is sweet. don't think I would like it sweet. I only know how to make it from scratch. corn meal, egg, milk and maybe a bit of flower if you wish. make it about the thickest of gravy. not to thick or to thin. pour it in a hot skillet with some bacon grease in it. I use a cast iron skillet and then in the oven it goes. 450 degrees for 25 to 30 minutes depending on the oven. if you don't like it so brown, then turn the heat down to 425 and check after 25 minutes. if you like butter on your corn bread, then take out of oven and use a fork to punch holes all over the top of the corn bread. then melt butter in microwave and pour all over top of corn bread. my sister use to do this when we were kids. I just flip mine out on a plate whole and have me a hot slice. of course I'm a bit strange and love hot corn bread with milk and onions. to much Southern in me I guess. eat like the poor folks did back in the South. I'm sure this wasn't the case at one point in time. Only rustic campgrounds can get away with such facilities today. I'd venture to say, it's this way anywhere in the more populated east. Back then we were lucky to be able to get someone with a baler to come do our hay. Now, believe it or not, there were some girls who also worked the fields with us. Usually they drove the hay truck. When I was about 8 I was assigned to drive the pickup when we combined the oats and wheat. I was not tall enough to really reach the peddles so I just got it into granny low and steered. I used the throttle on the dash to control my speed. Back then vehicles had a manual choke and throttle on the dash. Now, to keep the list traffic down I will also tell you a little story about the Little House and my Grandmother: My Grandfather on my Dad’s side was a full blood Muskogee Creek Indian. He did not like to live in the town and one day he decided to move back to his birthplace which was a log cabin build somewhere around 1850 or so. Although he did receive a BA from Harvard he still spoke with broken English. Anyway, somewhere long about 1947 they began to make improvements to the old two room log cabin so that Granny could live there. On one of the first trips back to the home place the call of nature came upon Granny and she paid her initial visit to the Little House which was probably a good half to a full block West of the cabin. She entered the outhouse and took up her place upon the seat. About the time her business began to take place there was a terrific commotion in the basement. It seems that a pack of either wolves or coyotes had selected this nice basement apartment for their home and had been there for a good number of decades. At any rate the end result of this event was that there were two clouds of dust leading from the Little House. One was Granny, frantically trying to properly arrange her clotheing, heading due East to the house and the other was a trail heading due West with the pack of animals beating a hasty retreat from this invasion of their homeplace. It goes without saying that before the sun arose the next morning the little house was moved closer to the log cabin. As I seem to recall it was not until the summer of about 1950 before the miracle of indoor plumbing came to the homeplace. I clearly remember the neighbors from miles around coming to the house to view this wonderous room with it’s white fixtures and bright blue fake ceramic tile walls courtesy of Monkey Wards.
