Eggs, scrambled and properly done

Dave, dave, dave.

As a seasoned fry and breakfast cook from decades ago I can tell you that a

properly prepared omelet is awfully hard to beat.

One of my favorites is the Western or Denver omelet.

Take 2 or 3 eggs, a wee bit of milk, just a pinch of baking powder (very

small amount), some chopped onions, a little ham or sausage, a bit of cheese

a little salt and pepper along with some mushrooms and olives and some

jalapeno peppers if you like a little heat and let her rip.

When the omelet starts to bubble real good and the cheese is mostly melted

then flip half of the omelet over the rest and leave it for about half a

minute. Flip the omelet over and leave it for another half minute to get a

nice brown color and serve it on a warmed plate along with some toast and

perhaps some hash browns.

Now, my friend, that is hard to beat.

When I owned my restaurant (greasy spoon type) I did all of the breakfast

run and we were overrun every morning.

Geez, I worked my hind end off in those days but I dearly loved being the

fry cook.

How about a open face sandwich consisting of a cube steak smothered with

chili, some fries on the side along with a little slaw?

Cy, Cy, Cy...

I'm a plain foods person. Don't like spices for the most part, and I don't like

rich foods. And, I don't like cheese either. My wife is opposite this, but she's

learned to live with this oddness.

Hey, take the delicious meal of scrambled eggs we've talked about. Why, I ask

you, why cover up the rich flavor of the egg with all those other ingredients?

I'm personally not a fan of omlletes, it's a textural thing for me. I prefer

mine scrambled or over easy, with the yolk runny to be sopped up with toast. I

made a fried egg sandwich once, with bacon and hot sauce. I put the eggs on the

toast okay, but when i bit into it, everyone at the table got hit with yolk.

So, we all headed back to the house, and those who needed showers took them,

most of us just changed clothes. So, when I eat a fried egg andwich now, I eat

it alone. Or at another table.

Ah ha, you need lessons in egg sandwich eating.

First thing to do is to start sucking as soon as you start to bite into the

sandwich. Start eating where the yoke is and then you will be able to

contain 99.99% of that wonderfully tasty yoke.

There is little better than a nice, warm, juicy egg sandwich with just a

hint of mustard on the bread.

Oh well, to each his/her own.

You and my wife, Crystal, would hit it off nicely. If it is spicier than

Manwich it is too spicy for her. (frownie face – LOLLOL)

And I don't mind crambled eggs as long as they are fluffy and not tried out.

And I have put ham, onions, green peppers, chilis, cheese, and other stuff into

the mix, while I'm moving the eggs around. But, when I go out for breakfast

with my wife, I always ask the server if the scrambled eggs are fluffy or like

omletts. If they say omletts, I go for the over easy fried, or just order toast

and ham. One of the reasons why I don't eat breakfast sandwiches from

Mcs.

Actually, if my wife uses a little too much pepper on something, it bothers me.

In truth, I can live fairly happily without salt as well.
