tortilla impaired

So, someone tell me the secret to making fresh tortillas. (corn)

I have a 5# bag of masa and plenty of water. I have a griddle.

I do not have a tortilla press.

I tried to make tortillas yesterday and it was a hoot. I nearly

burned the house down.

Maybe I should leave the cooking to my daughter............. She's

11, after all.

(JOKING! Nobody go calling Social Services on me. I'm TOTALLY joking.)

You are not the only one, I am dying for some tortilla wraps, I bought

some from The Gluten Free Mall, and as I opened them, well they smelt

like dog food, then I tasted them, OMG. I desided to make my own. For

my B-day my aunt bought me this flat bread maker, that has a press and

a grill, super fab. now I've tried two different recipes, both

horrible. First one turned out hard as a rock, the other one, they were

so hard to chew my jaw hurt.

Just wanted to let you know you are not the only one

We started making our own corn tortillas a few months ago and love them so much!  These are the things I've learned:1.  You must get a tortilla press.  Flattening it with a heavy pot doesn't leave them uniform and thin enough.  My husband actually made me a tortilla press out of left over pine, but they sell them fairly cheap too.  I can get a picture of my tortilla press online if you're interesting in making your own.2.  Press them very thin.  I've found that if they are too thick, they will not cook right, and taste raw and nasty.  3.  After the tortilla is cooked, place it between 2 plates (I use paper plates) and put moist paper towels on the top and bottom of the stack.  This makes them all steamy, and the tortillas become pliable after a few minutes.I cook my tortillas in a non stick pan, and have the fire pretty hot.  Since I can only cook 1 tortilla at a time it would take too long to cook them at a lower heat.  But you must watch them carefully as they will burn if you forget for a minute.I hope this helps-You are not the only one, I am dying for some tortilla wraps, I bought some from The Gluten Free Mall, and as I opened them, well they smelt like dog food, then I tasted them, OMG.  I desided to make my own. The recipe I use uses a variety of flours, but it's like a flour tortilla, not a corn one. I suppose you could substitute corn flour for the rice flour.....I've posted it before, and I got it from this list in recipes. I always liked the flour better than the corn, so that's why I use that one. Mission corn tortillas are gluten free, if that helps.

Why would you want to make tortillas when you can buy

perfectly good corn tortillas in Trader Joe's and

other stores. They are there just waiting for you to

pick them up and take them home!

I always heat each tortilla for 10 seconds in the

microwave (on a paper towel) before trying to fill it

with anything, but they make great enchiladas etc.

What recipe did you use for homemade tortillas? I've made them several

times, just from corn, and have always been pleased with how they

turned out. I rolled them out in plastic ziplocs, which worked well,

but I am hoping to get a press to make it less work intensive. I've

been thinking about trying the recipes from the files, as they sound

pretty yummy. I keep trying food for live brown rice tortillas, and

just can't get them to achieve a satisfactory texture, although I

think the quesadilla solution sounds promising. Ultimately though, I

really think that homemade have far superior flavor to the prepackaged

kind. In fact, I see some homemade tortillas in my future next week!

Too bad I don't usually have the time to make them...
