I learned from watching my grandmother, her sister, and my aunt - my mom can't make them to save her soul. I started making them and then adapted them to my liking. On Sunday after taking my Fosamax I methodically made the pancakes but actually measured and came up with this: 2 cups of flour - I substitute some whole wheat in here, sometimes add wheat germ, or oat bran 1/2 tsp of salt 1tblsp baking powder 2tblsp sugar Whisk together dry ingredients. Add: 6 eggs 3tblsp melted butter 3 cups soy milk - (you could use regular milk) 1tsp vanilla (opt) Whisk together until smooth, consistency of thick cream. This can be mixed ahead of time and refrigerated up to overnight. Fry in a medium/hot pan with a good oil until golden brown on each side. I usually make these the size of the pan 8 -10 inches across. These are served either flat or rolled with syrup or I make a quick sauce with melted butter, brown sugar and banana slices. Enjoy. The main difference is we roll them up with ligonberries or grape jelly (for the kids) on the inside and then top with powdered sugar. They are very good.
