Question: about cookies

I know you can't just substitute the flour in breads and have them

turn out the same but what about in cookies? Can I just use the Toll

House recipe and make it with GF All purpose flour mix? Will the

cookies hold together or do I need to add xanthan gum?

My husband was just diagnosed with Celiacs a couple weeks ago so I am

new to cookig without wheat. It took us a while to get the breads

figured out and we are still trying to find a glueten free recipe he

likes.
