Guest guest Posted August 22, 2002 Report Share Posted August 22, 2002 Cheeseburger Meatloaf serves 6 5 points/serving 1 pound extra lean ground beef 2 egg whites 1 t onion powder 1/3 c bread crumbs 1/2 c ketchup (divided) 2 t prepared mustard 2 t chopped dill pickles (optional) 6 slices 2% cheese (I used cheddar) Mix first 4 ingredients and 1/4 c of ketchup well. Pat into 8 x 11 " rectangle on a piece of wax paper. Top with remaining 1/4 c ketchup, mustard, pickles and 4 slices of cheese (broken into smaller pieces). Spread to within 3/4 inch of edges of rectangle. Using wax paper, roll up jellyroll-style starting with a short end. Pinch ends and seam to seal well. Place seam-side down on a broiler rack. Bake at 350 for 45 minutes. Remove from oven and slice remaining cheese on the diagonal and lay across meatloaf with corners overlapping. Return to oven for 3 minutes. Remove from oven and transfer to a serving plate. Allow to rest 10-15 minutes before slicing. A nice twist on your standard meatloaf plus it counts as 1 serving of dairy!
