The red coating actually is a fine sugar that gets the enzyme process going. There is more to the protective coating than I can educate on behalf of. Interesting if you ever have time to study about the product. What part of GI is upset with Bromelain? Upper, lower? Take your time. It's a process. Might as well set in for the long haul.
