At least this time, we started talking about it while my wife was on her way home from work. She made a stop and picked up some canned salmon and some salmon steaks. For myself, I put some olive oil in a baking dish then added the salmon steaks. Over top of this I poured some of my pasta sauce then covered the dish with foil. Into the oven it went, already preheated to 400 degrees. Ideally, this would be a 25-30 minute bake; I took it out at 25 minutes, decided it needed to go back in and gave it another 10 minutes for a total of about 35 minutes (which was fine). Meanwhile, my wife tossed some frozen brussel sprouts into a pot of water and we boiled up some whole grain pasta (rotini this time around). My wife took the canned salmon and started the mix for salmon patties -- salmon, egg, milk, parsley and cracker crumbs. When this was thoroughly mixed, she fried them in a skillet with a little vegetable oil spray (ala Pam). Along the line here, I chopped a little onion and a clove of garlic then added these to a pot with some butter. Then came the flour, followed by milk, followed eventually by cheddar cheese. This formed a cheese sauce to put over the pasta. End result -- dinner for four with LOTS of leftovers! The kids had brussel sprouts with mac 'n cheese and salmon patties (as did my wife). My little girl mooched some of my salmon and marinara sauce over pasta, and I added a little crumbled feta over top of my own plate for a bit of extra flavor. (I *TOTALLY* dig feta over pasta -- it's my weakness, what can I say?) For once, I just wasn't in the mood for a vegetable with my dinner this evening so I decided not to have one. Yeah, I know -- whoda thunk it? Technically, my pasta sauce counts as a serving or two I suppose, but ordinarily I'd have more. My meal was low sodium, reasonable fat, and nutrient rich. The rest of the family had a meal that was a bit higher in sodium and fat, but still well within reasonably healthy numbers. End all be all though, I had a great, SBD friendly meal.
