cut out cookie question/help

hi,

I was hoping to make some cut out cookies for my son's 7th bday (party

is on friday) and saw the recipes in the files. I have bought some all

purpose mixes (bob's redmill and kinnikinnick). My question is.. can I

use these mixes to make the cut out cookies or do I have to mix my own

flours? Obviously I am not a baker.

Any help would be so appreciated.. this is my first try at cookies

since he and I went gf and I want to try to make a cookie that all the

kids can eat. Also... one classmate is gfcf so if anyone knows how to

do that that would be helpful. thanks, as usual.

I don't know about the CF part, but this is my tried and true cut out recipe, it's a sugar cookie and no one can tell that these are "different." I think several here on this board have tried thes as well, and have had great results. Good luck! (If you don't want to use the sorghum flour just use 1/4 c more of rice flour)

1/2 C Butter

1 C Sugar

2 Eggs

2 Tbsp Milk

1 Tsp Vanilla

2 1/2 C Flour Mix (see below for the mix I use and LOVE)

1 1/2 Tsp Baking Powder

Pinch Salt

Cream together butter and sugar.

In separate bowl stir together eggs, milk and vanilla.

In separate bowl mix together dry ingredients.

Alternately add wet and dry ingredients to the butter/sugar mix. Mix well (I ended up having to use my hands to get it all mixed together well) Divide into 4 balls and chill 1-2 hours (this is really important and worked REALLY well) Roll and cut (I sprinkled the counter and the top of the dough with confectioners sugar and that worked great to prevent sticking but didn't give them a flour taste) Bake at 375 for 10 minutes.

Flour Mixture:

2 1/2 C Rice flour (brown or white is fine)

1 C Potato Starch Flour

1 C Tapioca Starch Flour

1/4 C Cornstarch

1/4 C Sorghum Flour

2 Tbsp Xanthan Gum
