Guest guest
Hey all, Here is the recipe that I found in Special Foods for Special Kids recipe book. It says Gingerbread Kids, so I assume it is for cutting out. I've never tried it, just found it when I was looking through the book the other day. Since there were several who asked for it, I just thought I'd send it to the list. 1/4 cup GFCF margarine 1/4 cup brown sugar 1/4 cup granulated sugar 1/2 cup molasses 2 cups white rice flour 1 cup soy flour 1/4 cup potato starch 1 tsp. baking soda 1 tsp. cinnamon 1/2 tsp. ginger 1/2 tsp salt 1/4 cup water Preheat oven to 350 degrees F. Cream together margarine, brown sugar, & sugar. Blend in molasses Sift together flours, soda, cinnamon, ginger & salt. Add 1/3 margarine mixture. Alternate remaining margarine mixture with water until dough is formed and finish mixing with hands. Roll out small portions of dough to 1/4 inch thickness on lightly greased board. Cut desired shapes and place on greased cookie sheet. Bake for 7 minutes. Cool on rack. It says to frost with Gingerbread Icing.....but the recipe is just confectioner's sugar and water. You may be able to find something better. Let me know if you want it and I will be glad to send it to ya. Judy
