YUM... Spinach Pie ~

I made this yesterday and there is one piece left right now! It is delicious!

I do have a question though for those who have made it...do you run the cottage

cheese through a processor or do you just dump it in with the other goodies?

Here you go, Celeste. It is one of my favorites:

Italian Spinach Pie 1,2,3

1 16-ounce container low-fat cottage cheese

1 10-ounce frozen chopped spinach, thawed and well drained

1 cup shredded reduced fat mozzarella cheese

1 cup eggbeaters

1 7-oz jar of roasted red peppers, well drained, chopped

1/3 cup grated lowfat parmesan cheese

1 tsp oregano

Preheat oven to 350 degrees.

Mix all ingredients until well blended.

Pour into 9-inch pie plate.

Bake 40 minutes or until center is set.
