Guest guest Posted January 5, 2006 Report Share Posted January 5, 2006 I had leftover ham from New Years Day so I decided to make a quiche using skim milk where I used to use cream. Turned out pretty good. Even my husband loved it. (feel free to add to files) Dolores in VA CRUSTLESS HAM, VEGETABLE & CHEESE QUICHE Ingredients: 1 Tbl. Olive Oil 1 small onion, chopped 2 cloves garlic, chopped 1 bag baby spinach 1 cup leftover ham, chopped into small cubes 2 cups part skim mozzarella, shredded 4 large eggs 1 cup skim milk 1 tsp. nutmeg 1/4 tsp. black pepper Place olive oil in a saute pan. Add chopped onions and cook until transparent. Add garlic and saute for about 1 minute. Add baby spinach and stir until just wilted. Remove pan from heat and let cool. Place the eggs into a bowl and whip. Add the milk, nutmeg and black pepper and stir. Set aside. Spray a pie plate with Pam. Spread ham in bottom, add the cooled vegetables next then the mozzarella. Pour the egg/milk mixture over all these three layers. Bake at 375 for about 30 minutes, or until center is cooked. Makes 6 servings.
