Guest guest Posted May 4, 2007 Report Share Posted May 4, 2007 My experience was an improvement in about four weeks with a few days of feeling systemically toxic during the first two weeks. For me, it has become easier to follow as time has gone on. Eventually the restrictions (no grains, starchy veggies or processed foods) become very familiar. When in doubt, don't. Any misstep and you are likely to feel unwell for a few days. I can't cook so rely heavily on: almonds (natural unsalted) frozen veggies (canned are illegal) steak (meats must be unprocessed) chicken ground beef fresh fruit for dessert or snacks eggs saccharin (I like the liquid) corn oil (the gonzo plastic containers are $5) lettuce olive oil (I use it as salad dressing) orange juice (not from concentrate) I don't like the all natural peanut butter or pure honey but they are easy to find at your grocer. The yogurt is very easy to make: organic milk heated to 160 for 5 minutes, cooled then combined with yogurt starter and fermented 12-24 hrs in a yogurt maker. The other ambitious suggestions, including cookies pancakes breads using nut flour, I have never attempted. Check the search engine on http://www.pecanbread.com to check on any food or additive. The diet gave me instant relief, so I knew it would be helpful. I had to stick to the beginner diet for quite some time (chicken soup, cooked carrots, SCD yogurt, SCD gelatin with fruit juices) and even had to go to fluids only for some time because I was having too much pain. Then suddenly one day I was all better It was at about the 6 week point. I am definitely sticking with this diet. The baked goods are a real treat after I had been on a GFCF restricted diet. All of a sudden I can have food with honey, butter, dates, raisins, coconut, cheese .... The biggest problem is that the 4 other people around here keep eating my stuff. At first I was spending a lot of time cooking for myself. Now I have it down to a system, make things in batches and freeze some. I have chicken soup, grilled hamburgers, pureed carrot, applesauce, pearsauce, almond muffins, carrot cake in the freezer for instant meals. I've been making the yogurt every day. Sometimes I forget and buy things like brown rice, then come home and wonder why I bought that 'cause I can't eat it anymore! It did help but I have to admit it did not get rid of yeast or heal his gut -- the only thing that did that was enough chelation. But others have reported great success with it. BUT the good news about the diet is that once you get over the initial hump of unfamiliarity it is a really easy way to shop and eat. We usually had some kind of meat, often sauteed in coconut oil, and some steamed vegetables, and that was it. The nut breads, pancakes, and muffins in BTVC are surprisingly good -- much much better than the GFCF replacement breads I've tried. The almond banana bread is fantastic! Hope it works well for you.
