Between the 2 celiacs in our house, we eat about 2 to 3 boxes of these each week and have never reacted. Some of them do have dairy, and after a bad glutening, I react to lactose for a few weeks to few months. Perhaps that is your problem? Sometimes the reaction is soon enough and clear enough to troubleshoot. Other times the reaction is that I start getting worse little by little. Then I have to re-examine every label in the house. From talking with many other celiacs, it seems to me that those of us who were not diagnosed before we went downhill pretty badly are those who learn they MUST avoid gluten contamination in food processing/preparation. Of course, other celiacs may be having more subtle reactions that can cause inflammation, and possible cell changes (i.e., cancer). It also seems that the intensity of any gluten reaction may be affected as much by our overall well-being (e.g., stress, nutrition, rest, other health conditions) as much as the " amount " of gluten. I choose to err on the side of caution. For example, if a Mexican restaurant doesn't make their own corn tortillas, I assume that the tortillas have been made on a surface dusted with wheat flour. I just move on to the next question (Do you use tomato paste in the rice, salsa or other sauces?). The fun never ends.
