Eggs are high in sulfur. When eggs decompose there is the characteristic 'rotten egg' smell which is hydrogen sulfide (H2S). The sulfur that we are concerned about when talking about trying a low sulfur diet are the readily available thiol groups. Thiols are S-H. The H is easily removed leaving the S free to attract some other element. When S is in the form of S-S (disulfide bond) it is not so reactive.
