I use Tinkyada brand rice pastas, when i do occasionally eat rice, and find them to be excellent and virtually indistinguishable from wheat pasta -- and so do the people i serve it to.(Though i have to say that there is own particular kind of theirs that i stick to,since the others tend to be mushier.) I also make my own gluten-free muffins, which are excellent, if i do say so myself, that incorporate nut flours. It may be a little easier for me, in that i was already buying and eating very little that was pre-packaged or far removed from its natural state and doing my own cooking. (Because of my sound sensitivity restaurants are out; and at this point there's not much in a restaurant -- or grocery store, for that matter -- that i would voluntarily put in my mouth anyway.). Plus, i belong to a community share association and get wonderful produce and organic meats during the summer.) So there really are ways to eat well and gluten-free. Which reminds me: There's a great blog called Gluten- Free Girl. The writer has recently come out with a book of her conversion to gluten-free eating/cooking (due to serious, serious health problems from gluten) that contains many recipes. I haven't seen it yet, but based on the recipes on her blog i know they'll be excellent. Hollis ===================== From: blueeberri@...
