You generally get more yogurt in the end if you chill it before you drip it. Katy

No. It just means you lost part of what would have set up, along with the

water of hydrolysis.

why is it necessary to chill the yogurt before dripping?

Because the bacteria are still growing and they must be undisturbed until it is chilled

I saw this statement in an earlier post and wanted to clarify: why is itnecessary to chill the yogurt before dripping?For the past 6 months or more, I have been dripping mine before I put itin the refrigerator and it seems to work fine for me. I line a colanderwith a flour-sack type dishtowel and let it drip at room temperature fora few hours after completion of the 24 hour ferment cycle.
