Hi Eileen. As I understand it, the reason we don't eat commercial ice cream

on SCD, is that it is made from non-SCD ingredients, including milk, milk

solids, and sugar. I don't know of any commercial ice creams made from SCD

yogurt. So the commercial ice cream, at a minimum, includes lactose and

sugar. There may also be illegal thickeners, chocolate, and who know what

else in the commercial product?

I have been making frozen berry yogurts since last summer, and they are at

least as good as any commercial fruit ice creams I have ever tasted. I use 2

cups plain SCD yogurt made from whole milk, 2/3 cup pasteurized clear honey,

and 1 cup pureed berries, liquefied and blended in a blender, then frozen

and aerated in a Cuisinart ice-cream/frozen-yogurt/sorbet machine.

Other people make SCD ice cream from dripped higher-fat SCD yogurts, such as

SCD yogurt made from cream.

My understanding of SCD is that we eliminate virtually all hard-to-digest

carbohydrates, including those in commercial ice cream, regardless of

whether we reacted to individual components in the past, so as to avoid

feeding microorganisms the incompletely digested products. We have to avoid

those products for at least one year after being completely healed.

I for one, enjoy SCD foods so much, that I am not in any rush to try non SCD

foods. The only times I wish I weren't on SCD are when people want me to go

out to restaurants with them. I have not yet found any SCD-compatible

restaurants, or any restaurant foods I can eat here in Toronto. Then again,

I rarely went to restaurants before starting on SCD, because of my multiple

chemical sensitivities. There are no fragrance-free or chemical-free

restaurants in Toronto, as far as I am aware, and I would have to wear my

half-face respirator to enter any restaurant, thus making it impossible for

me to eat.

Hope this helps.

Eileen,

To like clarify, when yeast is bad I start craving crap like (get this- I never

even ate this stuff when I could) fudge brownies out of a box with thick

chocolate frosting like Betty Crocker crap. Where in the world is this crave

coming from? That is absolute junk. I am telling you I was salivating and like

a puppy drooling at the idea of eating this stuff!!

I found when yeast gets better- I don't crave. I think you are still fighting-

hang in there.

Sometimes if craves get really bad they say it is best to keep a food journal

with all of your food dreams! It works!

Who knew I like lasanga so much. Boy was lasanga repeated over and over again

in any combo imaginable. Lasanga Bolonese, Pesto Lasanga- it just becomes

ridiculous at some point like " how many ways can we make lasanga? " well it's in

there... with like hearts and start next to it! LOL.

I have been in touch with the office quite a bit- don't remember if it was

Monday (I had an appt) You probably know better than me. Geography and Earthly

timelines are really not a strong point for me LOL. Got blood results in and

part of it is fantastic (best it's been since I am a kid- which shows surgery is

serving me well) but part of it is a disaster.. ARGH! Need patience- thus said

the person that learned she had no patience.

My daughter asked me today if I will have to eat this way for the rest of my

life. I told her quite honestly that it would have to be for at least two years,

and then who knows. It doesn't bother me to eat this way, except when I am in a

social situation and people don't understand why I can't even have a little

" taste " , or I am a guest at someone's house and I fear offending the hostess. DH

cooked steaks tonight and put BBQ sauce on them, and thought it was OK- because

he only used a 'little bit'. People find it hard to comprehend the idea that

even a little bit is not allowed, and no, I won't eat that steak.

I do hope to be lucky enough to eat off SCD at least during those times at some

point. I know Elaine's book says at least 2 years symptom free- although I see

people here going longer than that. I don't see myself eating giant big macs

three times a day ( never did before SCD ), but it would be nice to have a less

restrictive diet at some point.

Eileen, I don't think it is lack of exposure that would make you food

intolerant. I never had a problem with ice cream either. I don't think we could

ever pinpoint what it is that created GI problems- a combination of things

really. I hope there comes a time when you do tolerate it, maybe in moderation.

My DH is mildly lactose intolerant- he can eat a little ice cream, but a giant

bowl will make him sick.

I've always wondered if the spit test was accurate or not. But, I'm not overly

worried about yeast. From what I've read, Elaine seemed to think it would die

off once the bad bacteria was taken care of. Maybe then my insatiable sweet

tooth will die too :-).

I eat a tablespoon of virgin coconut oil a day. Is that a good amount to kill

off yeast?

Holly,

Every little bit helps and if you are progressing than just continue to do what

you are doing.. Some people (such as myself) really have a hard time and use

sweets as a crutch especially in the begining of the diet. There are signs but

I believe if you are using things in moderation for -you- you should be ok

unless it is really a systemic problem.

Take your probiotics once you are ready! And the yogurt!!

Best stuff to get the yeasties under control... It's not about killing really

it's about ingesting something that will repopulate your gut. I think it is far

more natural for the body. None of the less at times some of us need anti

fungals too along with dietary changes with-in the SCD.

I eat two cups of yogurt a day, YUM! I don't take any probiotics though, so

hopefully the yogurt is enough.

I recall that the yogurt contains much more probiotic bacteria than the

supplements, and that Elaine felt additional probiotics were not necessary if

someone was eating enough yogurt. The supplements have " billions " but the yogurt

has " trillions " , so it should be more than sufficient. Probiotics are added for

those who do not take the yogurt, and some people take additional ones if they

want to. Please clarify if I am not correct, thanks.
