Guest guest Posted July 26, 2009 Report Share Posted July 26, 2009 Peggy, If you can find beef shank--it usually has a marrow bone in the cut and typically come 2 or 3 shanks to a package. If you boil these down with salt and an onion , carrots and celery in the water ( don't eat the onion or celery if a beginner) they will fall off the bone--really tasty and you will get all the benefits of the bone and marrow in the broth. It will be very easy to digest as the long cooking breaks down the collagen fibers. Beef shank is also not that expensive. Terry Most digestable red meats I saw the post about the bone broth & I have been wanting to make a meat broth w/ a slow cooked meat w/ a bone but have no idea if suxh a cut even exist! I can't tolerate chopped beef patties yet & wondered if a slow cooked meat such as stew meat would be easier to digest. I am so sick of chicken, don't know how to cook fish, do OK w/ pork chops but they're always a bit dry & you can't reheat the next day so I need a new source of meat/protein. Well of course everyone is different and there's no way to predict what quirks you might have - but in general - yes - if the bones are roasted first and then cooked a long time in the broth, it will be super easy to digest. > I am so sick of chicken, don't know how to cook fish, google fish recipes online - good ones are not hard to find. Also, salmon with a little salt, pepper, and lemon juice on the grill is very good, served with SCD yogurt mixed with dill week to make a sauce. Also, my uncle slathered some of my mayo on a swordfish fillet and grilled it, and that was delicious!! Just a few ideas for you. Good luck! Doesn't take long at all. I use half a lemon on each side...lots of flavor. Guest guest Posted July 27, 2009 Report Share Posted July 27, 2009 Hi, Peg,I'll echo what Terry wrote, and add beef neck bones, and back ribs to the list of good soup meat.I had not had any since I was a kid, then often eaten with horseradish [probably way way too advanced, but can make down the road.] Since on SCD I cooked some up, very yum. Probably most meat-with-bone will make a tasty broth. The bone lends richness. Often such a broth will gel when cooled.
