Sorry for the format because it is in the rough but you will get the idea. Here is the list of cheeses listed in BTVC: Freely Brick Cheddar (Mild & Medium) - Sharp is Occasional Colby Gruyere Havarti Swiss Uncreamed Cottage Cheese (Dry Curd) Occasionally Asiago Blue Brie Camembert Edam Gorgonzola Gouda Limburger Monterey (Jack) Muenster Parmesan (If already grated, check to ensure that there are no added milk solids) Port du Salut Roquefort Romano Stilton Here is what Boarshead said to me regarding aging and carbs per serving(a good indication of lactose): , I was able to get precise information on the following cheeses: Vermont Cheddar – aged 3 months – 0 carbs per 1 oz serving Canadian Cheddar – aged over 3 years – 0 carbs per 1 oz serving Gold Label Imported Swiss – aged over 100 days – less than 1g of carbs per 1 oz serving Mild & Creamy Slicing Asiago - aged over 60 days – 1g of carbs per 1 oz serving Creamy Blue Cheese Crumbled – aged over 60 days – 0 carbs per ¼ cup (28g) Parmigiano Reggiano (pre cut) – aged 24 months – 0 carbs per 1 oz serving Imported Premium Grated Parmesan – aged for 10 months or more – 1g of carbs per 1 TBSP Grana Padano – (pre cut) – aged 16 months – 0g per 1 oz serving I do not have the exact age of the following cheeses. It is not published since it is considered proprietary information. I have noted the carbohydrate information on some. Black Wax Cheddar (yellow) – less than 1g of carbs per 1 oz serving Red Wax Cheddar (white) – less than 1g of carbs per 1 oz serving Imported Italian Pecorino Romano – 1g of carbs per 1 TBSP Master Cheesemaker’s Selections Gruyere – 0 carbs per 1 oz serving All the others that we make, Cream Havarti, Imported Brie, Edam, Gouda, Low Sodium Muenster, All Natural Muenster and Monterey Jack are considered young cheeses.
